本課程介紹一般生物化學課程中胺基酸與核?酸代謝部分的內容，包含蛋白質的分解、胺根轉換成尿素的過程、胺基酸及核?酸在人體內之分解與合成之過程及相關疾病。
課程目標
使學員熟悉且理解蛋白質、胺基酸、核酸與核?酸等含氮分子在人體內之分解與合成之過程；結合生物化學其他課程以進一步理解身體調控這些反應的方式；以便建立正確的健康飲食觀念。
